Zucchini Muthia
Ingredients:
1 cup grated zucchini
1 cup whole wheat flour
2 tbsp gram flour (besan)
2 tbsp semolina (rava)
1–2 green chilies (finely chopped)
1 tsp ginger paste
2 tbsp chopped coriander leaves
½ tsp turmeric powder
½ tsp red chili powder
1 tsp sugar (optional)
1 tsp lemon juice
Salt to taste
1 tbsp oil
Water as needed
For tempering:
1 tbsp oil
1 tsp mustard seeds
1 tsp sesame seeds
A few curry leaves
Instructions:
In a bowl, mix grated zucchini, wheat flour, gram flour, semolina, green chilies, ginger paste, coriander leaves, turmeric, red chili powder, sugar, lemon juice, salt, and oil.
Add a little water if needed and knead into a soft dough.
Divide the dough into long rolls and place them in a greased steamer.
Steam for 15–20 minutes until cooked. Let them cool and cut into small pieces.
Heat oil in a pan, add mustard seeds, sesame seeds, and curry leaves.
Add the steamed muthia pieces and sauté lightly for 3–4 minutes.
Serve warm with chutney or yogurt.
