Zucchini Muthia

Ingredients:

  • 1 cup grated zucchini

  • 1 cup whole wheat flour

  • 2 tbsp gram flour (besan)

  • 2 tbsp semolina (rava)

  • 1–2 green chilies (finely chopped)

  • 1 tsp ginger paste

  • 2 tbsp chopped coriander leaves

  • ½ tsp turmeric powder

  • ½ tsp red chili powder

  • 1 tsp sugar (optional)

  • 1 tsp lemon juice

  • Salt to taste

  • 1 tbsp oil

  • Water as needed

For tempering:

  • 1 tbsp oil

  • 1 tsp mustard seeds

  • 1 tsp sesame seeds

  • A few curry leaves

Instructions:

  1. In a bowl, mix grated zucchini, wheat flour, gram flour, semolina, green chilies, ginger paste, coriander leaves, turmeric, red chili powder, sugar, lemon juice, salt, and oil.

  2. Add a little water if needed and knead into a soft dough.

  3. Divide the dough into long rolls and place them in a greased steamer.

  4. Steam for 15–20 minutes until cooked. Let them cool and cut into small pieces.

  5. Heat oil in a pan, add mustard seeds, sesame seeds, and curry leaves.

  6. Add the steamed muthia pieces and sauté lightly for 3–4 minutes.

  7. Serve warm with chutney or yogurt.
